What is a whiskey thief?
Walk any rickhouse with a master distiller and they carry one tool: a long tube for pulling whiskey straight from the barrel. It is called a thief, and the name is older than bourbon.
How it works
A thief is a tube, classically copper, sometimes glass, with a narrow opening at the bottom and a vent at the top. Slide it through the barrel's bung hole, let it fill, cover the top vent with your thumb, and lift: air pressure holds the whiskey in the tube. Move it over a glass, lift your thumb, and the sample releases. One thumb, simple physics, and a distiller can taste any barrel in the house without moving anything heavier than the tool.
Why "thief"
Because that is what it does: it steals a taste the barrel was not planning to give up. The same tool in a winery is a wine thief. The name has been in use for generations of cellar work, and the gesture, thumb on the vent, sample held mid-air, is one of the oldest moves in the craft. Barrel samples drawn this way are how blenders judge maturity, pick single barrels, and decide what gets vatted with what.
The tool and the act
The thief is the taking half of a two-part craft. What follows the theft is the making: choosing which barrels marry into which blend, in what proportions, which is vatting. Take, then blend. Every serious whiskey in existence passed through both verbs.
Why the app carries the name
An infinity bottle runs the same two verbs at home: you thieve a pour from a bottle you love, and you blend it into the house vessel.
